Vegetarian ‘siniya’ with tahini


2 sweet potatoes
2 potatoes
2 red onions
2 zucchini
2 carrots
Olive oil
For the tahini sauce:
1 cup tahini paste
1 cup water
Juice from half a lemon
Pinch of salt


1. Cut the vegetables into large cubes and place in a baking dish.
2. Sprinkle with olive oil, salt and freshly-ground pepper and bake at 180 C until golden.
3. Mix together the ingredients for the tahini sauce until smooth.
4. Pour the tahini sauce on the vegetables and bake for a few minutes until golden.
